Oaxaca cuisine is one of the most delicious in Mexico and the world. The wonderful taste of Oaxacan cooking is actually a patient and labored practice of tradition. It has one of the most varied selections of foods in which the pre Hispanic ingredients are fundamental.

Black mole is the traditional dish, which is a sauce blended from tomatoes, onions, nuts, fried bread, black toasted chiles and chocolate. This is usually served with shreaded chicken. The main course usually consists of corn and meat and bread in the form of 'muertitos', 'tortitas', 'tarazones' or 'molletes'. Tortillas are the most versatile item. With wheat or corn flour they can be made into quesadillas, empanadas, picadas, gorditas, tostadas or tacos. The dishes are prepared with several spices which include hot peppers, avocado leaves, oregano, cloves, pepper, and cinnamon.

Coffee is exceptional and is considered one of the best in the world in quality, taste, and aroma. The mid afternoon chocolate drink is also very popular. Alcoholic beverages are Mescal, pulque, tepache or excellent Mexican beer. Other drinks include tejate, and aguas frescas.

The Mescal, the most genuine alcoholic beverage of the State of Oaxaca. It is made from an Agave cactus known as maguey espadin. The plant is cooked and crushed and is milled to extract the juices. Its then stored in barrels for fermentation and later distilled. It is then aged in oak barrels. The most popular Mescal includes the little worm that lends the distinctive aroma and flavor that has won international recognition.
